14 Day "You Got This" Challenge

DAY 1

Meal Planning

Day 1: Meal planning

The reason why we started out with this step, even on a business day, is to calm the mind.

When we feel unprepared, we won't work well within our business. The more prepared you are the more at peace you will feel and ready to tackle whatever is ahead.

I know a lot of us have been hitting the stores gathering what we can to make sure our families are fed for a little bit.

Let's use today to make a plan for what your family will be eating for the next 14 days. Breakfast, lunch and dinner... write it out and get prepared. We made this handy print out or PDF fillable form for you to start.

When planning this out, use only the food you have in the house now.  Let's see how far you can stretch what you have.

Jake and Becca's Go-to Favorites

You may or may not have these items in your house, but if you do, here are some of our favorite recipes in the Berg household.  Pretty much staples every week.  Enjoy!

Favorite #1

Pepper Salad

Chop up 2 bell peppers and mix in some chopped tomatoes. Once all chopped up add in a splash of apple cider vinegar and rice vinegar (really any single or combination of vinegar works. Apple cider just has that healthy kick to it).  Lastly, add in lots of lemon pepper and salt to taste.

Favorite #2

Easy Stir Fry

Cook rice (or cauliflower rice).  Begin frying on a large pan with your favorite oil, butter, or combination of the two. Add in your preferred veggies and cook until they are tender. Season with soy sauce to taste. Add pre-cooked meat and cook until hot. Mix in eggs and cook until the eggs are done. Top with sesame seeds. Drizzle with teriyaki sauce.

Favorite #3

Lettuce Cups

Cook up some ground turkey or meat until brown.  Add in some hoisin sauce or make your own (couple tablespoons of peanut butter, 4 tablespoons of soy sauce, little bit of honey, little bit of rice vinegar, shredded garlic, and just a bit sesame seed oil).  Gently peel back each leaf, wash it, then place it on a towel to dry. Serve family style!

Talk to you tomorrow, friends.  Can't wait for Day 2!
