Always fun to get new piglets here at the ranch. We’ve waivered back and forth about getting a sow and farrowing our own, but baring another pandemic, it just doesn’t make sense for us right now. We’re able to get Red Wattles from a local source pretty much whenever we need them.
Red Wattle’s are unique to North America, believed to have been discovered in the East Texas forest. This breed is known for being good foragers, hardy, and having an excellent growth rate. Because they are good foragers, they have exceptional flavor producing meat that is lean and tender. The Red Wattle hog is listed by Slow Foods USA in the “Ark of Taste”. Like many of the Heritage Breeds, they are listed as Threatened on the Livestock Conservancy List. But I must admit, I just have a thing for red-heads.
