Many, many years ago in a country far, far away… we had our first authentic schnitzel. Picture it – Bamberg, Germany, late 90’s, we were young, footsore from exploring Nuremburg, and hungry but looking for something authentic and new. A few other young lieutenants in John’s company had mentioned a local place near the base that had really good German food and we were lucky enough to find it. The restaurant was small but warm and friendly, full of families enjoying dinner and a good beer. We found space at a table and eagerly perused the menu only to find our German not quite up to the task, but we knew “schnitzel” and decided that we couldn’t go wrong with what was essentially a chicken fried steak with gravy. I ordered the Zigunerschnitzel and John ordered the Jägerschnitzel and our love affair with schnitzel (and spätzle) began. We still make schnitzel and spätzle on a regular basis, some 30 years later – John’s become quite the schnitzel expert.
