It's that time of the week! Hopefully you've got some time to bake this weekend. And if not, then maybe you can use this info to plan your next bake!
I'm going to keep answering some common questions I've seen popping up - if you have one, feel free to send it to me :-) There's a link to last week's question at the bottom of this email.
This week's question is all about storing your starter in the fridge. It's a popular topic and there are so many questions that I get asked about it. “Can I use my sourdough starter straight out of the fridge - I fed it before it went into the fridge”.
Now before I start - I want to say that you really don't want to put your sourdough starter into the fridge until it's matured.
Once it's in the fridge, you'll still need to feed it, but not as regularly. Now if you fed your starter before it went into the fridge, it will be quite happy in there. Your starter will still rise - and fall as it uses all of the energy you've given it. It will just do everything more slowly as it's in a dormant state.
When you want to bake with it, you don't want to use it right from the fridge. You need to take it out, discard and feed and let it come to peak. If you use it straight from the fridge, you're using a tired, sleepy starter. And that's not going to result in amazing sourdough!
