I've been deeply nostalgic lately. If I'm honest, it's a coping strategy. I've been on a bit of an emotional rollercoaster the past few months and what gets me through it all is nostalgia. The old comforts.
Knitting. Harry Potter. Yoga. Anything my mom cooks.
So we're having crepes for breakfast these days. The first time my family went to Paris, we had crepes at least once a day. They were delicious, and unmatched, and as soon as we got home, my mom started making them for us on weekends.
At first she found a box mix, but then started making them from scratch. I'm sharing her recipe here, because it's really the simplest and most delicious thing in the world. So simple that my brother started making them at 12 years old. (He once left a crepe next to my bed while I was sleeping in over a winter break in college and it was the sweetest thing in the world.)
I think the difference between homemade crepes and professionally made crepes is very slim, mostly probably in the availability of toppings. But if you have flour, butter, eggs, and milk in the house, maybe with nutella or fruits or honey, you're set.

Crepe Batter Recipe:
Makes about 4 crepes

cup flour
β
cup milk
1 egg

tbsp butter
fruit / honey / whipped cream / powdered sugar
1. Batter: Add egg to flour. Melt butter, add in. Slowly stir in milk with a whisk. Don't leave any clumps.
2. Cook: Spray pan on medium heat. Take about ΒΌ cup of batter and spread in a thin layer. Let cook on one side, flip, brown on other side.
3. Add toppings! My fav combinations: banana and honey / banana and strawberry jam / sugar
4. Fold in one side and then the other to overlap.
5. Top with whipped cream or powdered sugar.
