My Top 5 Recipes of the Week
Lately I've been thinking a lot about those quick weeknight dinners that SO come in handy for me as a busy mom of three. The ones that take only a handful of ingredients and dinner is ready in under 30!
Our family eats mostly vegetarian so it's essential that our pantry and fridge are stocked with plenty of produce, carbs, fancy and kid-friendly cheeses, yummy sauces, fresh herbs, nuts, and other “filler-foods” (as I like to call them) to keep us satisfied. Lately my baby girl (she's already 3!) has been insisting on “helping” in the kitchen and honestly I am thrilled to see her eyes light up when she experiences something new. I LOVE cooking with her, but I sometimes find myself getting a little stressed when the marinara starts flying and my “perfect” vision for our food creation is getting tossed out the window…I have to remind myself to just let the mess wash over me and just enjoy the special moments regardless of the cleaning that will take place later…LOL
I know sometimes the days are exhausting. I am right there with you. I hope you can find joy in the small moments this week and know that I think you are straight up killin' it, my friend!
