Happy February Friends!
 
Good Morning Everyone! Not only is it Friday, it's also a new month too! February brings Ground's Hog's Day (Punxsutawney Phil did see his shadow, so 6 more weeks of winter…really?), Valentine's Day, President's Day (YES! A 3 day weekend!) and Ash Wednesday (the start of the Lenten Season). Lots going on this month, that's for sure and I am looking forward to it all!
 
I hope you all enjoyed my first installment of my new email series, Shop My…Initially I was going to email this every other Wednesday, but I decided to send this out every Wednesday! I do have lots of things I love and want to share with all of you! Happy February Friends! 
 
February is here! I can't believe how fast January flew by! It's been so cold here lately! Some mornings have been below freezing, but that doesn't stop me from wanting to sniff everything on the ground and I don't care if mama is freezing, she has her winter layers on to keep her warm, BOL!!! 
 
In other news, my kitty sister, Ziva the Diva has been dealing with upper respiratory issues, probably a cold. If this doesn't clear up soon, she will have to be checked out by the vet and she really hates the vet! So, if you could keep her in your prayers, I would greatly appreciate it!

~This Week's Recipe~
Breakfast Cookies
 
These breakfast cookies are healthy, delicious and are SUPER easy to make! Oh, these cookies are not just for breakfast, they also make great snacks too!! Here’s the recipe (makes 10 cookies):
 
INGREDIENTS:
  • 1/2 Cup Rolled Oats
  • 1/2 Cup Applesauce or Mashed Banana (when I use applesauce, I use unsweetened)
  • 1/4 Cup Nut Butter (I used my all-time fave, Trader Joe’s No Salt Added Crunchy Peanut Butter)
  • 1/2 Teaspoon Pure Vanilla Extract
  • 1/16 Teaspoon Salt (or a pinch of salt)
  • 2-3 Tablespoons Mini Chocolate Chips
  • 2 1/2 Tablespoons Freeze-Dried apricots (or your choice of freeze-dried fruit)
  • 2 Tablespoons Sugar or Pinch of Stevia (Especially if using banana, you can easily omit the added sweetener entirely for a wholesomely delicious taste that's like eating mini muffins in the form of a cookie. If you'd prefer more of a dessert taste, add extra sweetener as desired, starting with the listed 2 tbsp and going from there - if you want to use a liquid sweetener, just cut back on the banana or applesauce)
  • Optional Add-Ins: chia seeds, shredded coconut, etc.
DIRECTIONS:
  1. Preheat the oven to 350 degrees.
  2. Mash the applesauce or banana with the nut butter until smooth, then stir in all other ingredients until well-combined.
  3. Shape into cookies (I used a mini cookie scoop).
  4. Bake on a greased cookie sheet for about 15 minutes.
  5. Let cool for 10 minutes before removing from sheet.
NUTRITION: Serving Size: 1 cookie, Calories: 112, Fat: 7g, Carbs: 10g Protein: 4g
