This Scored Zucchini with Whipped Goat Cheese is the perfect low-effort, low-ingredient recipe that looks and tastes a lot fancier than it is. I made a variation of this last night for my parents with a side of garlic shrimp, broccoli and onions. I didn't have goat cheese or Greek yogurt, so I used an Italian feta, coconut milk, a little bit of mayo, avocado, mint and salt. It was perfect and they loved it. Improvise, always!
