Greek Egg Mug
The feta and basil in this single serve Greek egg mug recipe bring so much flavor and the great thing about egg mugs is that you can easily customize them with whatever veggies and cheese you have on hand and takes 10 minutes to prepare. This recipe isn’t just healthy, it’s also easy to make which comes in handy when you are trying to get everyone (including yourself) out the door to work and school. Here is the recipe:
Ingredients:
1/2 cup chopped spinach leaves
1/4 cup chopped red onion
2 large eggs (or 1/2 cup liquid egg substitute)
2 tbsp. diced tomato, patted dry
2 tbsp. crumbled reduced-fat feta cheese
1/2 tbsp. chopped fresh basil
Directions:
In a large microwave-safe mug sprayed with nonstick spray, microwave spinach and onion for 1 1/2 minutes, or until softened.
Blot away excess moisture. Add eggs or egg substitute, stir, and microwave for 1 minute.
Stir in all remaining ingredients. Microwave for 1 minute, or until set.
Nutritional Value: 117 calories, 2g total fat (1.5g sat fat), 459mg sodium, 8g carbs, 1g fiber, 3g sugars, 16g protein

Hey Everyone!
Happy Friday Everyone!! It's been a wild week for weather around here! Monday was 70 degrees! It was great and mama took me on a extra long walk too! Tuesday we were under a “High Wind Warning” with wind gusts over 70 mph and a high of 50 degrees. Wednesday morning we were downgraded to a “Wind Advisory”, and then Wednesday afternoon, it snowed! Yesterday was really breezy, cloudy and cold. Today is the same as yesterday, but tomorrow the weather will be a mixed bag of tricks with heavy rain (and possible snow) and more wind! OMD! This is just crazy! At least Sunday will be sunny, but cold with a high of 48 degrees! I hope spring brings all of us better weather! We need it!!
