During March in the Northeast we look for the first signs of spring, eagerly checking hidden spots in nature. Yet, wild foods; ramps, mushrooms and dandelions, are not ready to sprout. We are getting to the tail end of the fall preserves and root vegetables, sacked in cold storage. We long for sweet strawberries, peas and, chive blossoms, and yes, those wild foods. While you wait, try microgreens, a nutrient rich food available all year-round!
