THIS WEEK'S RECIPE
Pineapple Angel Food Cake
Spring is in full swing, and summer is around the corner and it’s time to start bringing out lighter dessert recipes. The recipe I am sharing today is so easy and you only need two ingredients. Now this is a light dessert, but it’s not light on flavor! Here’s how to make it:
Ingredients:
1 Box Angel Food Cake Mix (any brand)
1 20 oz. Can Crushed Pineapple (any brand, in its own juice, do not drain)
Whipped Topping (optional)
Directions:
Preheat oven to 350.
In a large mixing bowl, whisk together the angel food cake mix and crushed pineapple. The mixture will froth and become airy and fluffy in the bowl.
Once everything is all mixed up, pour into an ungreased 13 x 9 baking dish, and bake for 30 minutes.
Cool completely before serving.
That’s it! In about 40 minutes, you will have a delicious light dessert that will have everyone asking you for the recipe!

Hey Everyone!
Well, it has been a while since I have barked with all of you! I hope you all are doing well. It has been busy in the office (I am mama's executive assistant and I can say it's been busy) as well as at home too, but thank goodness that Friday is here and the weekend is on the horizon! We don't have any plans this weekend which is good, I need to rest and relax! Mama has been making such demands on me in the office! (Let's be real here, do you really think I actually work? No, I do a lot of sleeping on the job which makes mama crazy and I don't really care, BOL!!).
In other news, the pine tree pollen is terrible and the high winds does not help! We all are suffering with allergies! Mama, her roommate and Ziva the Diva are dealing with sneezing and watery eyes and I am not sneezing as much as they are, but I am dealing with watery eyes. Mama has to clean my tear stains on my face more that usual. We cannot wail until the winds subside and the pine trees stop pollenating!
