In honour of Mother's Day, I would like to dedicate this House of Albi Journal to the woman who raised me. My absolutely incredible, strong, courageous, creative, beautiful mother Brenda (aka our amazing Operations Manager here at House of Albi).

I would like to share my absolute favourite ways to spend time with you, our favourite dessert and some Mother's Day e-cards with our House of Albi Journal subscribers in your honour!

What are your favourite ways to spend time with a mother in your life?
½ cup butter or margarine, 2 tbsp white sugar, 1 cup flour, press into 8 × 8 pan. Bake at 350 for 15 minutes until golden.
Meanwhile take 1 box frozen or 3 cups fresh strawberries, and 2 tbsp white sugar, bring to boil for 1 minute. Take off heat, add 1 package strawberry jell-o mix, stir until dissolved. Put in fridge until it begins to set, pour over first mixture. Return to fridge.
Serve with cool whip, ice-cream or cut into squares with a topping of icing sugar.
