summertime is grill time 
Grilled Lemon Dijon Chicken
serves 4
Marinade:
1-2 lbs Chicken breasts (boneless, skinless)
1-2 lemons (about a 1/4 cup of juice)
about 1/4 cup olive oil
1 shallot (chopped)
2 cloves garlic (chopped)
2 tablespoons grainy Dijon Mustard
1 tablespoon herbs de Provence
1 teaspoon dried thyme
Kosher salt and fresh ground black pepper to taste.
 
Place chicken in the marinade in a large Ziploc for 20-60 minutes prior to grilling on the barbeque.
