Hi Everyone!!
 
I hope your week was a fantastic one! I can't believe August is here! I feel like summer just started and now the kids here in Las Vegas will be heading back to school August 8th! This summer has flown by, although I am really looking forward to fall!! It has been so hot and humid here and I am tired of spending the days of summer inside with the A/C on! We did get a little relief from the heat (not the humidity) Tuesday & Wednesday when the monsoon storms moved through here, but the temps are inching back up again! Anyway, enough of talking about things going here…  
 
Over at The Glam Budget Lifestyle, I started sending a twice weekly email that highlights some of the Amazon daily deals. Chocolate Peanut Butter Oatmeal Protein Cups
 
These chocolate peanut butter oatmeal protein cups are rich, moist, and you would never know these muffins were made without any oil or butter. The muffins are filled with ripe bananas, creamy peanut butter, and almond milk. Grab one of these healthy muffin bites in the morning for breakfast or pack them as a pre-workout snack. Here’s how to make them…   
 
Ingredients:
  • 2 TBS. Chia Seeds (plus 6 tablespoons water)
  • 3 Medium-to-Large Ripe Bananas (mashed)
  • 1 Cup Unsweetened Almond Milk (cashew or coconut milk work too)
  • 1/4 Cup Creamy Peanut Butter
  • 1/4 Cup Pure Maple Syrup (or substitute with stevia or other sweeteners)
  • 1/2 tsp. Vanilla Extract
  • 1 Scoop Chocolate Protein Powder (any brand)
  • 3 Cups Old-Fashioned Oats
  • 2 TBS. Unsweetened Cocoa Powder
  • 1 TBS. Baking Powder
  • Pinch of Salt
Directions:
  1. Preheat oven to 350°F. Spray muffin tin with cooking spray.
  2. In a small bowl, stir together chia seeds and water to make “chia eggs.”
  3. Place bananas in a large bowl and mash with fork. Add almond milk, peanut butter, maple syrup or stevia and vanilla and stir until well mixed. Stir in chia eggs.
  4. Add protein powder, oats, cocoa powder, baking powder and salt. Stir to combine.
  5. Spoon mixture evenly into a muffin tin, filling tins to the top. You may have some leftover batter. Bake for 25 minutes.
  6. Remove from oven and cool in pan on a wire rack. Remove from pan and store in an airtight container in the refrigerator.

Hi Friends!!
 
Happy August Everyone! Summer is almost over, and I must say, I am happy about that! I am looking forward to the arrival of fall so I can go on long walks again, lounge outside on the patio on the new pet bed mama got for me (like I am doing in this picture, taken last week before mama made me come in because it was heating up) and going back to the dog park to run and play! We all know the saying “the dog days of summer”, well, I am counting the days until “the dog days of fall" are here! But for now, I still have to endure the hot & humid days of August and the hot days of (most of) September! Oh well, that's how Las Vegas summers are!
 
In other news, My adopt-a-versary was July 30th! I have been in my forever home with mama for 2 years! My how time flies by! I remember being in the shelter, scared, not knowing when or if I would find a forever home, but here I am, 2 years later living my best life! I am so happy mama came when she did and took me home to live with her!! I am so very thankful for that!!!

The Best Of What I Wore This Week

I love this ensemble I put together to meet friends for lunch at the California Pizza Kitchen earlier this week! It was so nice to get out in the middle of the day away from business and enjoy time with the girls! I decided to go with an elevated casual look with a basic white t-shirt, dressy, but casual black shorts and heeled sandals. I will say, the photo shoot to capture this look before heading to the restaurant was hard for me because I am not comfortable being in front of the camera at all (whether it's taking photos or video). I am very self conscious about how I look and how people will perceive me and I know I really should not care what anybody thinks, but I do. I guess it's because I am turning 60 next month and what I mostly see online is the “younger than me” crowd and I also know there are women online that are around my age or older and that gives me hope that I can conquer this fear I have and be comfortable being in photos and on video!
