I hope your week was a sensational one! My week was crazy busy, but Friday is here and the start of the weekend is just a few hours away and I can't wait! As of right now, I don't have any plans to go anywhere, so my plan is to spend the weekend at home with Audriana, maybe hang out at the pool (weather permitting) and indulge in a glass (or two) of Pinot Grigio! I love when I have a weekend where I don't have to put makeup on or put some sort of outfit together to wear. I can just wear pj's all day if I want to and be okay with that! But, my plans could change, who knows, but for now my weekend plan is to be at home!

RECIPE OF THE WEEK
Taco Lasagna
This recipe is easy, delicious, and perfect for a weeknight meal! Here’s how to make it:
INGREDIENTS:
1 10 oz. Can Rotel Original
1 15 oz. Can Black Beans (rinsed & drained)
1 15.25 Can Corn (rinsed & drained)
1 Cup Shredded Cheddar
1 20 oz. Can Enchilada Sauce (or 2 10 oz. cans)
1 Pkg. Corn or Flour Tortillas (I prefer corn tortillas for this recipe)
DIRECTIONS:
Preheat oven to 400 degrees.
Mix together Rotel, beans, and corn in a bowl.
Spray a casserole dish with nonstick spray and layer 1/4 cup of enchilada sauce on the bottom.
Layer the bean mixture, then tortillas and repeat until all of the ingredients are gone.
Layer the top with cheese and bake for 25 minutes.
NOTE: Serve with a tossed green salad for a balanced meal and don’t forget the sour cream!

Hi Friends!!
Hello Friday & Hello Weekend! I hope you all had a great week! My week was filled with all of usual things that I do! Now on to story time! On my potty breaks first thing in the morning, it is not unusual to see kitties out and about around here. My first instinct is to go after them, but mama stops me (as usual) and makes me continue with my potty break. Well, there is this one particular cat that mama calls “Attack Cat” because this cat will charge and try to attack any dog it sees (including big dogs) and I am no exception, this cat has come after me too a few times. Doesn't matter what mama does to scare the cat, the cat just keeps coming after me. Well, the other morning, we walked past “Attack Cat” who was laying down on the grass, and the cat did not run to attack me! We were surprised and relieved! I guess we are now allowed to walk past the cat without worrying about a possible attack! Of course, we are talking about a cat who can change its mind whenever it wants, but for now things seem to be okay!
In other news, there has been no excessive heat warnings this week! The temps have been between 100-105 degrees, but the humidity has been crazy! There has been a lot of monsoonal clouds and some rain throughout the week and this weekend the monsoon storms are supposed to be rolling in which will make for a wet weekend! I don't know how much rain we will get where I live, but the humidity will definitely be here, rain or not! OMD!!
