It gets no better than crispy local free-range Berkshire pork hot off the rotisserie, served in a Baker Bleu roll with salsa verde, burnt butter, pickled fennel. This incredible ensemble is the work of one of our Prahran Market favourites,
G.McBean Family Butcher.
This weekend…., if you’re early enough, Gary, Ash and the team will be making a slow cooked lamb, harissa and baba ghanoush roll. You can guess where we’ll be.

An invitation to dine out in the city introduced us to a hidden gem, Pearl Chablis and Oyster Bar, an intimate dining space tucked away in the heart of the city. We were treated to a delicious menu of creative small courses, starting with the freshest, briniest oysters, then some bite size snacks which included a decadent toasted caviar sandwich made from brioche, egg yolk fudge, crème fraiche and Osetra caviar.
Pictured above is a dish of smoked Paspaley pearl meat, old vine Chablis, cauliflower and beurre blanc and we finished the evening with a bitter chocolate and sunchoke caramel tart, topped with pink peppercorns and more caviar. All partnered with a variety of impeccable wines and exceptional service. Not a bad effort for a school night, we will be back for more.
