An homage to the iconic Champagne style that champions Chardonnay above Pinot Noir, from those whose innate knowledge has brought traditional method sparkling wine to six countries on four continents. 15% of the base wines are fermented in French Oak to bring richness and structure, while secondary fermentation extends almost four years (42 months, to be exact) for the ultimate complexity and harmony in this sensational release out of singular Carneros, Napa Valley vineyards. Its delicate balance of lemon and apricot with light brioche and medium-plus mousse-like texture makes it an outstanding choice for the holiday meals ahead, from roasted cauliflower and baked potatoes to a classic herb-stuffed chicken or turkey. 92% Chardonnay, 8% Pinot Blanc. Bohème was founded in 2004 with a personal mission from farmer-owner-winemaker Kurt Beitler to make world class Chardonnay and Pinot Noir from the Coastal Range of Occidental, California. The winery was named for the local Bohemian Highway stretching through Occidental. While Kurt grew up in the wine business (Chuck Wagner, of Caymus Vineyards, is his uncle on his mother’s side), he charted his own path, planting and farming a handful of vineyard sites and curating the best vines under his own label. Taylor Ridge Vineyard grows on a wooded bluff, approximately 5 miles from the Pacific Ocean. Its sandy-clay loam soil derives from the prehistoric Wilson Grove Sea, which once covered western Sonoma County. During the growing season, cool fog from Tomales and Bodega Bays engulfs the coastal ridge top—a climate that slows nutrient uptake by the vines, giving wines of uncommon delicacy and red-fruit beauty. 4.9 acres of Chardonnay and Pinot Noir were planted in 2005. This 2015 is aging beautifully in its eighth year under cork, with the bright cherry fruit and prominent baking spice of youth fading into savory sage, dried orange peel, violets, and Saba notes. Only 75 cases produced. Very limited. |
