This can be a season of decision overload! What to wear, what time to leave, do we have the gift, who grabbed the tickets, has everyone gone potty before we load up… 
To help you feed your crew just a little faster in this season - I’m sharing one of my easy weeknight food hacks - 1 protein (make it once), used across 3 meals. 

But what are we going to eat? (1 protein, 3 meals)
Start with this easy Italian Beef recipe. Make it in your slow cooker Sunday afternoon or pop it in Monday morning before work. Make enough for the whole week. I grab a chuck roast from Costco - they’re 4-6 pounds. To make it a little more lean - I pour all the juice off into a glass bowl and put it in the fridge for like an hour (or overnight). All the fat rises to the top and you can skim it off. Allows you to keep the flavor without all the goo.
Monday: Classic Italian Beef Sandwiches
  • Pile Italian beef on a crusty Italian roll.
  • Add giardiniera or sweet peppers.
  • Melt provolone or mozzarella cheese on top.
Tuesday: Italian Beef Stuffed Peppers
  • Hollow out bell peppers.
  • Stuff them with Italian beef, cooked rice, and tomato sauce.
  • Bake until peppers are tender.
Wednesday: Italian Beef and Pasta Skillet
  • Mix Italian beef with cooked pasta - use a fun pasta like pappardelle to make it feel special
  • Add pesto, parmesan and your favorite Italian herbs.
Thursday: Leftover Night
  • Everyone chooses their favorite from the week or puts together their own thing if they prefer. If they won’t eat it again, the Kirkland Pepperoni pizza can save dinner.
Friday: Eat Out
  • You made it through the week – take the fam out for dinner or order in!
