Summer, Summer, Summertime!
Hi First name / there
 
The first signs of summer for me aren't the longer days and warmer nights but rather something so much more simple, sleek, and slender - rhubarb. 
 
That's right, the first time I see those bright red stalks shining in the aisle of the grocery store or on a stand at the farmer's market I know…it's SUMMERTIME! ☀️
 
Summer solstice - the official start of the season - may still be a couple of weeks away but, in my energetic rhythm, summer has already set in. 
 
A couple of weeks ago, I made my first Strawberry Rhubarb Crisp of the season, one of my favorite summer cuisine pastimes. In addition to being pure deliciousness, one of the reasons I love to cook with fresh, sun-ripened rhubarb is because it is full of essential nutrients such as vitamins K and C as well as potassium, magnesium and calcium, which make this summer wonder excellent for bone and blood health. 🩸
 
With 95 percent water content - among the highest of of all vegetables - rhubarb is also extremely hydrating to the cells and, as a lycopene (or a red carotenoid), it fights inflammation and delivers a ton of antioxidants. 
 
In Ayurvedic medicine, rhubarb is considered tridoshic (it pacifies all three doshas), with a particular affinity for calming pitta dosha by acting as a choleagogue, which cleanses and cools the liver - exactly what my body needs in summer.
 
And thus begins my summer medicine. 🍓
