Chef's Corner: Fall Harvest |
|
Fall harvest time is officially upon us! Traditionally, fall harvest is a time of year for people to come together and share their bountiful harvests and gifts with the community in preparation for the long cold months of winter. All of the hard work from spring and summer comes to fruition with a feast fit to bring a community together. Harvest comes from the Old English word for autumn, “Hearfest”, meaning to reap, gather, and store what has been grown. One important crop to remember at this time of year are all the varieties of tomatoes. Grown with many varieties, they create delicious tomato sauces, and are one favorite staple that you will use over the winter months. Other popular fall harvest items consist of squashes, pumpkins, apples, grapes, pears, celery, and beets. There is such a feeling of accomplishment with being able to go into your cupboard and open a can of something that you grew and harvested. Creating a meal to feed your family and knowing you are carrying out a tradition that our ancestors did, brings a feeling of primal accomplishment full of rewards. The best part of fall harvest is sharing with friends and family! Passing along excess squash, (because there’s always so much!), or a freshly baked pumpkin pie is such a great way to share and instill a satisfying sense of tradition. Hope you enjoy a bountiful harvest, and a beautiful fall season! Cheers! |

Through the Grapevine: You've Bourbon On My Mind |
|
This time of year you see a lot of “pumpkin spice” this and “apple cider” that. While both flavors scream fall, I would like to turn your attention to another option to warm your bones on those chilly fall nights, good ole’ American made Bourbon! Whether you like yours neat or in a perfect Manhattan, a good Bourbon drink will warm you from the inside out. Did you know that Bourbon is the only spirit the United States can claim as its own? In 1964, Congress passed a resolution stating Bourbon is unique to the United States and like no other whiskey in the world. This prevents other countries from ever declaring they produce Bourbon! There are some strict rules regarding what Bourbon must be. First, it must be made and aged in the United States. Second, it must be made from a mash that is at least 51% corn (this is the distinction between whiskey and bourbon). Third, it may only be distilled to a proof no higher than 159 (79.5 percent ABV). Fourth, it must be aged in new charred oak barrels. And fifth, it can be bottled at no less than 80 proof. Bourbon has been around for over two hundred years, with the Reverend Elijah Craig as the first person to distill this wonderful product in 1789. In 1795, Jim Beam was founded and has been passed on through seven generations. It remains the bestselling Bourbon to this day. It has evolved over the years, but the process is still the same. There is an unaged Bourbon product called White Dog that has allowed many distilleries to offer new and interesting small batch whiskeys. Do you like your Bourbon neat or as a cocktail? Either way we now offer them smoked. Ask your server to try one next time you’re visiting us. |

When you talk about the longevity of employees at Capital Prime, there are a number of people come to mind. One of them is Cassandra Jones. Cassandra is our longest standing employee and has been with the Capital Prime Family since day one! Cassandra stated that one of her favorite things about working at Capital Prime is that it truly is a “big family!”. With her excellent communication skills and the ability to work well with everyone, Cassandra is a wonderful resource to train a new server on how to assimilate the “Capital Prime way”. It often surprises people to find out that she has two sons, one already being a young adult, who also works at Capital Prime. In her free time, Cassandra is an amazing manicurist. Cassandra says “I’m passionate about what I do for a living. It’s allowed me to provide for my family, build connections with great people and form lasting friendships”. When asked about what she is most proud of herself for, she replied, “overcoming some tough obstacles, I don’t look like what I’ve been through.” Cassandra’s positive attitude and genuine personality will continue to serve her well into the future. One thing she wants people to see is “I always look at the bright side of things. My brain and my heart are looking to shed light on darkness. I’m constantly pushing myself to be the best version of myself and I’m always speaking life and positivity into everything, even when I’m going through a storm” Next time you come into Capital Prime, ask for Cassandra and you will see her beautiful smile and be assured a wonderful evening. Thank you Cassandra, for your 11 years of amazing dedication and service! |
