As we embrace the heart of this special time of year, we have some exciting surprises in store for you. Before I get ahead of myself, let me introduce myself—I am Adam Villaire, the newest Sous Chef at Capital Prime. I began cooking when I received my first Easy-Bake Oven at the age of seven and have cooked professionally for 15 years in various kitchens throughout Chicago and Nashville. I am thrilled to join this amazing team led by Executive Chef Scott Finch. This season, we will be serving our full menu, along with many delicious “featured” appetizers, entrées, and desserts. One of our current favorite features is our mouthwatering Prime Rib, available every Sunday. We’ve also created a unique new Prime Rib appetizer: Barbecued Prime Rib Bites. Our chefs have worked diligently to perfect this special dish. The bites are sautéed in au jus, basted with house-made barbecue sauce, and served with horseradish aioli. Another beef feature you can look forward to is the Morel Duxelles Beef Wellington. This classic dish elevates our tender filet mignon by pairing it with an orchestra of flavors, highlighted by the finest morel mushrooms. This past week, I’ve been reminiscing about the wonderful memories we’ve shared with all the amazing guests who chose us as their dining destination throughout the year. Whether it was for graduations, accomplishments, birthdays, rehearsal dinners, weddings, bachelorette parties, baby showers, or countless other celebrations—you are the reason we love what we do. Thank you for sharing your special moments with us. This month, we’re getting back to what we do best: letting our creativity shine with our phenomenal wine dinners. Executive Chef Scott Finch has been eagerly waiting to prepare a Tequila Dinner—and his time has finally come! On January 29th, we’ll host a Don Julio Dinner, featuring a menu designed to bring a little Mexican sunshine into Michigan’s cold winter. Let me share a little history about Don Julio Tequilas: In 1942, Don Julio González began crafting his tequila in a distillery he named “La Primavera.” The rich volcanic soil of the region provided the ideal environment for growing exceptional agave plants. Don Julio’s devotion to perfecting every step of the process—from planting to harvesting to distillation—set a standard that has been followed ever since. - Don Julio Blanco is tequila in its purest form, crafted from the finest agave plants.
- Don Julio Reposado is aged for eight months in American white oak barrels, giving it a rich flavor and golden amber hue.
- Don Julio Añejo is made in small batches and aged for 18 months in similar barrels, resulting in a deep, complex flavor.
- Don Julio Rosado is perhaps the most visually striking, with its delicate pink hue from aging in Ruby Port wine casks, which lend notes of dried red fruits and caramel.
- Finally, Don Julio 1942, the crown jewel of the collection, offers celebrated notes of vanilla, caramel, chocolate, and agave undertones, enjoyed worldwide by tequila connoisseurs.

We are excited to introduce you to Talon Jones! At Capital Prime, we think of ourselves as one big family—and in Talon’s case, that’s literally true! Talon is one of three family members who are all part of our extended Capital Prime family. Talon has been with us for nearly a year and a half and is trained in many aspects of running the restaurant. When asked about his favorite part of working here, Talon shared, “It’s the people I work with and the ability to grow and gain all the knowledge I can from the experienced and dedicated individuals I work with.” Talon’s enthusiasm for learning, paired with his ability to retain and apply that knowledge, makes him an invaluable member of our team. From Host to Server Assistant, Food Runner, and now Expo, Talon has excelled at every role. Unsurprisingly, he says, “I’m eager to learn whatever people have to teach me, especially about food and libations. I love learning things I can share with our guests.” His passion shines through in his attention to detail and his willingness to step in wherever he’s needed. When asked what he’s most proud of, Talon said, “Being able to make myself valuable while making a name for myself.” One thing Talon wants everyone to know is, “I’m always going to try my hardest, and no matter the pressure, I WILL SUCCEED.”…and Talon, we know you will!
