Fresh and Flavorful Foods for the Season As the chill of winter fades and nature awakens, spring offers a bounty of fresh, vibrant ingredients that invigorate our plates and palates. This season is all about renewal and we have updated our Chef’s Compositions and some of our fish preparations just for you! Here are some seasonal delights to savor this spring. Crisp and Colorful Vegetables Spring welcomes an array of nutrient-rich vegetables that add crunch and color to meals. Asparagus, one of the season’s most iconic veggies, is perfect for roasting, grilling, or tossing into salads. Have you tried our Marinated Grilled Asparagus? It is grilled fresh and drizzled with balsamic reduction and topped with grated Grana Padano. Radishes, with their peppery bite, bring zest to dishes, while tender greens like arugula and spinach provide a fresh, leafy base for spring-inspired salads. - Aromatics: The wines are typically highly aromatic, with notes of citrus, green apple, peach, and floral elements like jasmine or honeysuckle. As the wine ages, it can develop complex honey and mineral notes.
- Sweetness Levels: Michigan winemakers produce Riesling in a range of styles, from bone-dry to late-harvest, dessert-style wines. The cool climate allows for natural acidity to balance the sweetness in the sweeter styles, making them particularly enjoyable.
- Depending on the style, Michigan Rieslings can be very fruity and crisp, with flavors of lime, green apple, and stone fruits.
Types of Michigan Rieslings - Dry Riesling: Michigan dry Rieslings showcase the crisp acidity and minerality that the region is known for. They are often described as elegant and refined, with notes of lime zest, green apple, and sometimes a subtle flintiness.
- Off-Dry Riesling: This style has a slight residual sugar that balances the acidity, giving the wine a rounder mouthfeel and flavors of peach, apricot, and honey.
- Sweet Riesling: Late-harvest Rieslings from Michigan can be intensely fruity, with flavors of ripe peach, honey, and candied citrus peel. These wines tend to be rich yet well-balanced due to the high acidity.

Abigail “Abbie” Ellis has been a part of the Capital Prime family for over 4 years. When asked what her favorite part about working at Capital Prime is, she responded, “Getting to talk to guests and making their experience special, while working with my family away from home.” Walking into work and seeing Abbie with her positive attitude and beautiful smile on her face is always a great way to start the day. Her attention to detail and ability to multitask allows her to make our guests feel like the top priority they are. One thing about Abbie that surprises people is the fact that she is an almost-professional sourdough baker. She loves bringing in her newest creations to share with everyone at Capital Prime, and we all love it too! Abbie is passionate about being outside! One of her goals in life is to hike every National Park in the U.S., and she is well on her way with eight hiked to date. Abbie is a recent MSU graduate with a degree in Agricultural Business Management and is proud of the fact that she put herself through MSU working full-time at Capital Prime. She is truly a hard worker who perseveres to achieve her goals. Now that she has graduated, she has more free time and has recently become smitten with being a “Puppy Mom” to her little Dalmatian named Cash.
