A5 Wagyu: Japan’s Most Delicious National Treasure

If steak had a luxury tier, Japanese A5 Wagyu would be sitting on a velvet throne, sipping sake, and accepting applause. This isn’t just beef—it’s the Rolls-Royce of Ribeye; it’s the gold standard. This is the kind of meat that makes you pause mid-bite and reconsider everything you thought you knew about steak.
 
Many restaurants claim to serve Wagyu beef, however, Capital Prime is the only restaurant
selling A5 in our area. A5 is the highest-grade Wagyu can get, based on a Japanese scoring
system for:
  • Marbling (spoiler: it’s insane)
  • Color & Brightness
  • Firmness & Texture
  • Fat Quality
That rich webbing of intramuscular fat is not just pretty—it melts at body temperature, making
each bite feel like steak and butter had a “love child.” This isn’t a T-bone you toss on the grill
and flip 12 times.
 
Fun fact: True Japanese A5 Wagyu comes from specific breeds raised with legendary care. A great deal of love and care goes into raising cattle to achieve A5 standards. Many claim these cows live like kings! Some Wagyu calves are hand-fed until they are seven months old. They are given heaters, regular massages, space to graze, and are fed three nutritionally complex meals each day. Over the last couple of centuries, Japanese farmers have discovered that feeding Wagyu cattle a mix of rice, hay, and other grains along with greens helps to create the most tender, marbled appearance, creating meat that will melt in your mouth. Unlike traditional beef cattle, Wagyu are slower to mature and require extreme patience to get them to a slaughter weight of 1,400–1,500 lbs. Most A5 Wagyu cows live only 2–3 years. Think massages, beer, classical music…honestly, these cows live better than most of us.

assured. Wagyu beef is rich in beneficial monounsaturated and omega fatty acids and lower in cholesterol. Monounsaturated fatty acids have a potent anti-carcinogenic property, as well as delivering an anti-inflammatory agent. We would like to introduce you to our Spotlight Employee of the month, Corey Edgington. Corey has been part of the Capital Prime Family for almost a year. His focus is the heart of our kitchen: “The Broiler.” Every great steakhouse has a great broiler, but not every steakhouse has a “Corey.” His attention to perfection is evident with that thin line between Rare and Medium Rare, and he doesn’t miss a beat on every other temperature.
 
Corey’s favorite part of Capital Prime is the family he has been hired into. For him, Capital Prime is all about the people. Being surrounded  so many team members with excellent culinary skills,  Corey is right at home since he “loves to learn as much as possible,” and it shows in his passion for his work.
 
Overcoming obstacles is something Corey is very proud of, and if it doesn’t show, Corey says, “I’m one of the kindest people you’ll ever meet.” We at Capital Prime agree—his low-key attitude and generous spirit, coupled with his awesome broiler skills, make him an asset we are blessed to have and proud to stand behind.
 
So, if you’re in the mood for a nice glass of wine, a great steak, and maybe a little violin music—yes… Corey plays the violin—then stop on by and order it any temp you like. Corey will not let you down.
