Chef's Corner Sweet Dreams Are Made Of These |

Let’s talk about dessert — because honestly, what else is there? Whether you're a frosting fanatic, a mousse maniac, or someone who justifies "second dessert" as a valid life choice (same), we have five sweet showstoppers guaranteed to make your taste buds do a happy dance. Carrot Cake – The Overachiever of the Dessert World Who knew vegetables could taste this good? Moist, spiced layers studded with walnuts and smothered in cream cheese frosting — carrot cake is like that friend who brings wine and dessert to the party. Bonus points if there’s a marzipan carrot on top. Lavender Crème Brûlée – Fancy, with a Floral Twist Picture this: you crack that caramelized sugar top with your spoon (pure ASMR magic), and out wafts a whisper of lavender. It’s smooth, creamy, and slightly perfumed — like your dessert went to a spa retreat in Provence and came back more delicious than ever. Espresso Bread Pudding – The Rebel of Comfort Food This one’s not playing around. Cubes of buttery brioche soaked in espresso custard, baked to golden perfection, and possibly drizzled with a boozy caramel sauce. It’s cozy. It’s bold. It’s the caffeine-and-carb hug you didn’t know you needed. Limoncello Tiramisu – Italy Called, They Want Their Zing Back A zesty twist on the classic, this tiramisu trades espresso for lemon liqueur and gives mascarpone a citrusy high-five. Light, fluffy, and tangy, it’s basically sunshine in dessert form. Serve chilled — ideally with a smug smile. Chocolate Mousse Cheesecake – Where Decadence Meets Divine Two words: chocolate. Overload. A dense, creamy cheesecake layered with silky mousse and crowned with ganache — this beauty is not here to play. It’s the kind of dessert that makes you close your eyes after the first bite. And maybe cry a little. Whether you're Team Citrus, Team Chocolate, or Team "I'll take one of each," these desserts prove one thing: life is short. Eat the fancy treat. And no judgment if you eat it first. Cheers! Thru The Grapevine Wine Pairing and Sipping in Style |
|
Summer is heating up, and whether you're firing up the grill or dining with us at Capital Prime, the perfect wine pairing can turn a great meal into an unforgettable one. We’ve handpicked five exceptional wines — from crisp Chablis to bold Zinfandel — and matched them with stellar steak and seafood combos. Here's your ultimate guide to sipping in style this season. Domaine Jean Charton Chablis & Grilled Sea Bass Elegant and steely, this classic Chablis offers bright citrus and flinty minerality. It’s the perfect match for delicate grilled sea bass served atop a parsnip purée, spinach, morel mushrooms, and roasted beets. The wine’s acidity cuts through buttery sauces like a pro. Why it works: Chablis' minerality mirrors the ocean’s essence, making every bite and sip feel like a sea breeze. Vietti Barbera d’Asti Tre Vigne & Prime Sirloin Steak This Italian gem delivers juicy red berries and a touch of spice with vibrant acidity. Our marinated Prime sirloin steak, cooked medium-rare, brings out the best in this wine’s earthy undertones. Why it works: Barbera’s high acidity is a match made in heaven for rich, meaty cuts — it lifts the dish without overwhelming it. Tre Son Zinfandel & Grilled Lamb Chops Bold, jammy, and unapologetically fun, the Tre Son Zinfandel is packed with dark fruit and spice. Pair it with our lamb chops topped with house-made mint chutney and served with trumpet mushroom and asparagus risotto — and let the fireworks begin. Why it works: Zinfandel's boldness stands up to sweet, spicy barbecue, creating a flavor explosion you won’t forget. Orin Swift Mercury Head Cabernet & Bone-In Ribeye This powerhouse Cab doesn’t hold back — full-bodied, rich, and complex, it’s a showstopper next to a bone-in ribeye. It is normally served with our garlic-herbed mashed potatoes, but I like to upgrade to our truffle fries to consider the night conquered. Why it works: Big steak needs a big wine. Mercury Head delivers velvety tannins and structure that love fat and umami. Veuve Clicquot Brut & Seared Day Boat Scallops A classic that never goes out of style. Veuve’s golden bubbles and toasted brioche notes shine with buttery scallops atop creamy polenta, finished with bacon jam and blackberry reduction. Why it works: Champagne + seafood = magic. The bubbles cleanse your palate and keep each bite as exciting as the first. With our extensive wine list and knowledgeable staff, we’d love to help you pair your favorite meal with the perfect wine.
