A comforting yet elevated choice for a romantic evening, this dish features tender airline chicken over creamy polenta, enriched with rustic braised wild mushrooms and finished with a bright white wine heirloom tomato sauce.

Perfect for couples seeking something bold and celebratory, the grilled lamb chops are topped with mint chutney and paired with a velvety trumpet mushroom and asparagus risotto—a luxurious pairing for a special night out.

A vibrant vegetarian option, this plate layers bok choy, red beets and grilled shiitake mushrooms over roasted garlic butternut squash purée, with soy-glazed forbidden rice adding depth and color. It’s as beautiful as it is flavorful.

Elliott Hardy has been with Capital Prime for 4 years but comes with years of knowledge in the culinary industry. From food knowledge to wine pairing, Elliott is sure to elevate your dining experience to the next level.

His skill set is his ability to talk to any guest at any time about anything. It’s not just about taking an order and serving his guests while they eat. Elliott is passionate about the time spent with each-and-every guest and creating an experience that extends beyond consumption.

He is proud of having worked his way up through the restaurant industry to achieve the professional level of service that he delivers to his guests today.

“It may surprise people how old I am,” Elliott says, being a Professional Server at fifty-eight, and it’s true, not only is he young at heart, but he runs around like he’s in his twenties.

When asked about his favorite part of working at Capital Prime, he says, “the people I work next to every day! I want everyone to know that I am here to help, no matter what is needed.”

 

Elliott continues his journey with serving and has recently been promoted to help with the management team at Capital Prime. We look forward to his experience and many years of knowledge to continue elevating Capital Prime at its top performance.
