Day 01
After breakfast at the villa, we depart for a visit to a traditional olive oil farm, where you will be welcomed by local producers for an immersive experience into one of Italy’s most treasured culinary traditions. The visit includes a guided tour of the production process, followed by a sensorial olive oil tasting designed to highlight aromas, flavors, and quality differences. A relaxed lunch on-site will demonstrate how to perfectly pair olive oil with regional dishes, deepening your understanding of its role in Italian cuisine.
In the afternoon, enjoy a scenic walk to the historic town of Assisi. A professional guide will lead a visit to the renowned Basilica di San Francesco, a UNESCO World Heritage Site, offering insight into its extraordinary frescoes, history, and spiritual significance.
Cooking Class and Paolo Bea Winery Tour 
Day 02
Enjoy a full-immersion cooking class led by local Chef Stefania, who will guide you through the preparation of traditional Umbrian dishes using seasonal ingredients and time-honored techniques. The experience concludes with a leisurely lunch, featuring the dishes prepared by the group.
Following lunch, take a short “dolce vita” break before visiting one of Umbria’s most esteemed winemakers, Paolo Bea. Here, you will be introduced to his philosophy and enjoy a guided tasting of his exceptional wines, celebrated for their authenticity and strong connection to the territory.
Dinner is served in the evening at one of Umbria’s most renowned osterias, Ottavius, offering a refined yet welcoming setting to end the day.
Truffle Hunting
Day 03
Travel to Monteleone d’Orvieto for an unforgettable truffle hunting experience, guided by expert truffle hunters and their highly trained dogs. The hunt is followed by a special lunch featuring the truffles found during the experience, offering a rare opportunity to taste some of Umbria’s freshest truffles in their purest form.
The afternoon is dedicated to relaxation at the villa, allowing time to unwind and enjoy the peaceful surroundings.
In the evening, enjoy an exclusive dinner prepared by a Michelin-starred chef, accompanied by Rocco’s curated wine pairing, creating a truly memorable culinary experience to conclude the day.
Winery Tour and Michelin Star Dinner
Day 04
Visit the prestigious Palazzone Winery, where the day begins with a guided tour of the modern winemaking cellar, home to the celebrated Orvieto Classico “Terre Vineate” and “Campo del Guardiano.” The experience continues with a short walk through the chestnut woods, leading to an ancient Etruscan grotto where the Musco is vinified using the traditional hand press—an extraordinary blend of history and winemaking.
A three-course lunch is served at the winery, showcasing Umbrian cuisine and highlighting the region’s beautiful white wines.
After a relaxing break at the villa, the evening concludes with dinner at the Michelin-starred Restaurant Une in Capodacqua, for a truly refined culinary experience.
 
Perugia, Wine and Jazz
Day 05
On the final day of the trip, explore the vibrant food markets of Perugia, wandering the cobblestone streets and discovering a variety of local specialties, artisanal products, and unique shopping finds.
Lunch is served at one of Perugia’s finest trattorias, offering a true taste of Umbrian cuisine. After lunch, enjoy more time for shopping and soaking in the lively atmosphere of the city.
In the evening, the day concludes with a special dinner at our friend’s winery, Scacciadiavoli, accompanied by live music from a local jazz artist, creating a memorable and elegant finale to your journey.
