Join us on March 23 for our Italian Wine Dinner, an evening of thoughtfully paired wines and chef-crafted courses inspired by Italy’s rich culinary tradition. Doors open at 5:30pm. Seating is limited, so please call to reserve your place.

Capital Prime is honored to welcome back Executive Chef Ryan Lucas, a culinary visionary whose leadership, creativity, and dedication helped shape the restaurant’s identity during some of its most memorable years. His return marks an exciting new era—one defined by elevated cuisine, thoughtful innovation, and a renewed commitment to exceptional dining.
 
A Foundation Built on Excellence
Chef Lucas brings with him worldclass training from the Culinary Institute of America, where he graduated with honors. His education at one of the most respected culinary institutions in the world refined his technique, sharpened his creativity, and instilled the discipline that continues to guide his work.
 
He also holds an Associate of Arts and Management from West Shore College, giving him a strong understanding of both the artistry and the operational excellence required to lead a premier dining establishment.
 
A Return to His Culinary Home
From 2016 to 2021, Chef Lucas played a pivotal role at Capital Prime. During those years, he:
  • Curated multiple seasonal and signature menus
  • Elevated the restaurant’s culinary standards
  • Helped redefine fine dining in the Lansing community
  • Built a reputation for dishes that were both innovative and deeply rooted in classic technique
His return brings not only experience, but a renewed vision for the future of Capital Prime.
 
A Chef With a Sommelier’s Palate
As a trained sommelier, Chef Lucas possesses a rare dual mastery: the ability to craft extraordinary cuisine and the expertise to pair it with the perfect wine. His understanding of balance, structure, and flavor allows him to create dining experiences that feel complete, harmonious, and unforgettable.
 
This unique skill set will guide the development of new menus, wine dinners, and elevated pairing experiences for our guests.
 
A Leader of Integrity and Service
Chef Lucas is also a proud United States Marine Corps veteran, bringing discipline, honor, and leadership to every kitchen he leads. His commitment to excellence is evident in his work ethic and in the respect he inspires among his team.
 
Beyond his professional achievements, he is a devoted father to his son, Leon, who remains his greatest pride and joy.

We would like to introduce you to Chris (Christopher) Symons. While Chris has only been with us for a little over 7 months, but he was raised in the business! “Most people are surprised at how long I’ve been in the food industry. Starting at the age of 13 I was working for my dad, who was an executive chef."
 
His favorite part of working at Capital Prime is the camaraderie that he has with everyone. And we feel the same!
 
Chris always comes in with a smile on his face. When asked about his most valuable asset, he says, “my positive attitude and my dedication to perfecting my craft as a professional
chef.”
 
He has a passion for food and living life to the fullest, “whether it's collecting vintage gaming material or cooking an amazing meal, my determination to be the best at what I do is what I am most proud of.”
