Capital Prime Spotlight: The Majesty and Rarity of Alaskan King Crab

Few dishes embody that spirit more than Alaskan King Crab Legs, a guest favorite, known for its impressive size, luxurious flavor, and remarkable journey from the icy waters of the Bering Sea to your table. 
 
Alaskan King Crab has long been considered one of the world’s most prized seafood delicacies. Harvested in the frigid, remote waters surrounding Alaska and the Aleutian Islands, these crabs have been part of the region’s fishing culture for decades. The fishery grew significantly in the mid-20th century as coldwater fishing technology advanced, allowing crews to safely navigate the rugged coastline and bring this extraordinary catch to market.
 
Today, fishery is among the most carefully regulated in the world, with strict quotas designed to protect crab populations and ensure longterm sustainability. 
 
The appeal of Alaskan King Crab lies in its unmistakable flavor—naturally sweet, rich, and buttery, with a tender texture that sets it apart from all other shellfish. Whether paired with drawn butter or enjoyed alongside one of our signature sides, King Crab offers a moment of indulgence that feels both comforting and extraordinary.
 
In recent years, the availability of Alaskan King Crab has been shaped by a combination of environmental, regulatory, and global market pressures. 
 
Environmental changes in the Bering Sea have disrupted crab populations. Warmer waters and altered ocean conditions have contributed to dramatic declines, with billions of crabs disappearing in recent years.
 
Strict quotas and fishery closures have been implemented to protect the species. After years of low stock levels, harvest limits remain far below historic norms, even as early signs of recovery begin to appear.
 
Global supply disruptions have reshaped the market. Historically, about 90% of the world’s King Crab supply came from Russia, with the remainder from Alaska, Canada, and Norway. Sanctions on Russian seafood in 2022 dramatically reduced global availability, leaving non-Russian sources unable to meet demand. 
 
These factors have created a perfect storm of limited supply and rising prices, making Alaskan King Crab more of a luxury item than ever before.
 
Despite these challenges, Capital Prime remains committed to sourcing the highest quality Alaskan King Crab available. When it appears on our menu, it represents not only a culinary indulgence but also a testament to responsible stewardship and the extraordinary journey behind each leg.

1. See
Every wine tells a story before you even take a sip. Begin by observing the color and clarity. A deep ruby red may signal richness and maturity, while a pale gold white often suggests freshness and bright acidity. Swirl the glass gently and notice how the wine catches the light—its appearance offers the first clues to its character.
 
2. Swirl
Swirling isn’t just for show. This movement introduces oxygen, unlocking aromas and allowing the wine to open up. As the wine coats the glass, you may also notice the “legs” or “tears” that form—an indicator of body and alcohol level.
 
3. Smell

A New Season at Capital Prime
A new season is arriving at Capital Prime Steak & Seafood, and with it comes an exciting evolution of our menu. Beginning in April, Executive Chef Ryan Lucas will debut a collection of dishes crafted to elevate the Lansing Area dining scene. Chef Lucas has spent the past several months refining flavors, sourcing exceptional ingredients, and designing plates that balance creativity with the classic excellence our guests expect.
 
Alongside these new culinary offerings, we’re expanding our wine program with thoughtfully selected bottles from around the world. From bold reds to crisp whites and expressive sparkling wines, our updated list is designed to complement every course and introduce guests to remarkable vineyards and varietals.
 
And of course, no visit to Capital Prime is complete without a hand-crafted cocktail, or house-made dessert! This spring, our bar team is unveiling a refreshed lineup of drinks that blend technique, artistry, and a touch of magic. Expect vibrant flavors, house-made infusions, and presentations that turn every sip into an experience.
 
We can’t wait to share what’s next. April marks the beginning of a delicious new chapter—one we’re thrilled to enjoy with you.

If you have been to Capital Prime in the last three years, you have most likely had the pleasure of being taken care of by Lily. And if you have, you would never guess that this is her first time working in a restaurant, “I’m proud of myself for working up from busser to food runner to server in one year and never dropping a glass rack!”
 
Lily is a natural, “I love caring for others” she says, and it shows. From timeliness to her table etiquette, Lily stays on top of all our guests' needs.
 
Lily also has a way of making you feel right at home. As she says, “My favorite part about working here is the family vibe.”
