Why Steaks Look More Done on Our Shaded Patio

At Capital Prime, we’re proud to serve some of the finest steaks available—from the bold Porterhouse and buttery Filet Mignon to the richly marbled Ribeye, the deeply flavorful Dry-Aged New York Strip, and the luxurious Japanese A5 Wagyu.
 
But if you’ve enjoyed a meal on our patio or near our large windows, you may have noticed something surprising:
 
Your steak can look more done than it actually is.
 
Rest assured—your steak is cooked precisely to the temperature you ordered. What you’re seeing is a lighting effect, not a cooking difference.
 
Why Shade Makes Steaks Look More Done
1. Shaded light mutes red and pink tones
Our patio sits mostly in the shade, which naturally reduces the intensity of warm colors.
  • Medium rare steaks appear closer to medium.
  • The pink center of a Filet Mignon or Dry-Aged New York Strip can look slightly subdued.
  • Even the vibrant marbling of Japanese A5 Wagyu appears less pronounced.
  • Shade essentially “softens” the color spectrum, making the interior of a steak look more neutral and less rosy.
2. Diffused Light Reduces Contrast
Without direct sunlight, the contrast between the seared crust and the interior color becomes less dramatic.
  • A Ribeye may appear more uniformly brown.
  • The tenderloin side of a Porterhouse can look more cooked than it truly is.
  • The delicate, silky interior of A5 Wagyu may seem slightly darker.
3. Indoor Lighting vs Shaded Outdoor Lighting
Inside the restaurant, warm ambient lighting enhances the natural pink and red tones of a perfectly cooked steak. On the shaded patio, those tones flatten.

A Refreshing Tradition Perfect for Patio Season 
 
There’s something magical about evenings on the Capital Prime patio. The shaded comfort, the relaxed atmosphere, and the gentle hum of conversation create the perfect backdrop for a drink that’s as vibrant as the season itself: Sangria.
 
This year, we’re celebrating three hand-crafted sangrias — White Peach, Red Apple, and Dragon Fruit — each designed to complement warm nights, great food, and the easy-going charm of outdoor dining.
 
But before we dive into the flavors, here’s a little story about where this beloved drink began.
 
Sangria traces its roots back to Spain and Portugal, where wine has been part of daily life for centuries. The earliest versions appeared over 2,000 years ago, when Romans traveled through the Iberian Peninsula and mixed local red wines with fruits, spices, and water to make them safer and more enjoyable to drink.
 
Over time, this simple mixture evolved into a cultural staple. Each region added its own twist: citrus along the coast, stone fruits in the countryside, spices during cooler months. By the time sangria made its way to the Americas, it had become a symbol of hospitality, celebration, and warm-weather gatherings.
 
Today, sangria remains exactly what it has always been: a drink meant to be shared, savored, and enjoyed in good company — which makes it a perfect match for our patio.
 
White Peach Sangria
Light, crisp, and beautifully refreshing. This sangria blends juicy white peaches with bright citrus and floral notes. It’s smooth, delicate, and ideal for guests who love a drink that feels like a gentle summer breeze.

Jacob has made it his goal to make someone’s day every single time he walks through the doors of Capital Prime. With a big smile and a positive attitude that is contagious, he comes to work every day, ready to “make it happen”!
 
“My most valuable skillset is to stay composed under tension and keep a good attitude, just keep shining bright”.
 
Jacob has always been an active person. From his long wrestling career to his time helping run the Lansing City Outreach program, Jacob says, “Whatever I set my mind to, I always finish and do my best work. I love creating music and am studying audio engineering at Lansing Community College and am in the middle of making a project album”.
 
When asked what is one thing you want people to know about you, Jacob said, “ I will do anything to excel!” And we see it everyday you come into work.
