Happy May Day! When I was a girl, we would pick flowers from our yard, place them in paper cone-shaped baskets, and secretly deliver them to our neighbors. We'd ring the doorbell, run and hide, and watch from our hiding place. It was fun to see our neighbors' surprised faces, even though they knew who brought the flowers. As I'm writing this story, I'm inspired by photos that show the quiet beauty of the moors, the heather-covered hills, and ever-changing skies that remind me of the Brontës' novels. This is where Charlotte Brontë wrote Jane Eyre, Emily Brontë wrote Withering Heights, and Anne Brontë wrote The Tenant of Wildfell Hall. It focuses on Mary, the often overlooked sister as she journeys from Meryton to London, and beyond, in search of love, independence, and the self-worth she has long been denied. Healthy and Delicious Muffins to Enjoy |

Banana Zucchini Muffins 1 ½ cups almond flour 1 ½ tsp baking powder ½ tsp sea salt 1 tsp cinnamon 3 Tbsp maple syrup 1 egg 1 banana, mashed 1 Tbsp melted coconut oil 1 cup grated zucchini Preheat oven to 350ºF and line a muffin pan with paper muffin liners. Combine almond flour, baking powder, sea salt, and cinnamon in a bowl and set aside. Combine mashed banana, maple syrup, egg, and melted coconut oil in a medium bowl or stand mixer, and mix together vigorously. Add grated zucchini to wet ingredients and mix well. Add dry ingredients to wet ingredients, and mix until well incorporated. Divide batter among 9 muffin cups and bake for about 30 - 35 minutes, until a toothpick inserted in the center of a muffin comes out clean. Makes 9 muffins.
