We’re officially in that window of calm before the festive storm, and if you’ve met with me this week, you already know what I’m about to say… I’m challenging you to step it up a little. This is the week to tighten things up, get a touch more disciplined so you can enter December feeling in control and have room to enjoy all the good this holiday season has to offer! A few small habits, solid choices, and planning in advance is all you need! Let’s make this week count!

Mint Chip Smoothie
 
Ingredients: 
1 cup of unsweetened almond milk
½ cup frozen blueberries 
½ cup frozen cauliflower (gives the same texture as a banana, while bringing sugar down)
1 tbsp. all-natural almond butter 
1 scoop of vanilla protein powder 
1 scoop of unflavoured collagen powder
handful of mint leaves 
handful of frozen spinach 
1 tbsp. cocoa nibs 
 
Instructions:
1. Add all ingredients (besides cocoa nibs) into a blender and blend until smooth.
2. Once blended, all in cocoa nibs and pulse it for a few seconds so it keeps the “chocolate chip” texture
3. Top with a few more cocoa nibs and enjoy! 
 
Serves 1

Sheet Pan Meditteranean salmon bake
Ingredients:
2 Wild-caught Atlantic Salmon fillets 
1 tbsp. Extra Virgin Olive Oil 
½ tsp. garlic powder
½ tsp. oregano 
1 diced zucchini 
1 cup cherry tomatoes, halved (I love doing red & yellow)
½ cup diced red onion, go thicker cut for this recipe
1 cup baby potatoes, halved
10 kalamata olives, halved
2 tbsp. feta cheese 
Fresh parsley or dill leaves on top
Sea salt and black pepper, to taste 
option to add a squeeze of lemon for more flavour!
 
Instructions:
1. Preheat oven to 400°F and add all veggies, olives, potatoes, and spices to a baking sheet with olive oil first and bake for 15 minutes. 
2. After 15 minutes, add Salmon to the center of your baking dish, surrounding the veggies/potatoes, and bake for another 20 minutes
3. Top with feta cheese and parsley/dill & enjoy!
