Cock-A-Doodle-Doo Gluten-Free Bakeshop spent a year relentlessly developing a gluten-free and vegan croissant that goes far beyond simply resembling the classic shape. The result is a truly modern croissant. Just look at this beautifully layered pain au chocolat. 
The pastry is remarkably feather-light with an open, airy honeycomb interior and paper-thin layers of crisp delicate lamination.
