Nerano is a tiny fishing village tucked along the Amalfi Coast — the kind of place you'd miss if you blinked — but it's home to one of Italy's most famous pasta dishes. The story goes that a local trattoria owner started frying zucchini and melting it down with Parmesan to coat spaghetti, and word got out. 
 
These days it's the pasta Stanley Tucci can't stop talking about, and once you taste it, you'll understand why.
 
We make ours with rigatoni instead of spaghetti: fried zucchini chilled overnight so it breaks down into something almost saucy, a generous hit of Parmesan, a squeeze of lemon, and torn basil on top. It's rich without being heavy, and the zucchini practically melts into the noodles.

Beef Bacon Breakfast Bagel Recipe
4 bagels, toasted
8 slices Summerhill Beef Bacon
4 eggs
2 large ripe tomatoes, sliced
2 cups baby arugula
1 tablespoon butter
¼ cup grainy Dijon mustard
2 tablespoons honey
 
Whisk together the grainy Dijon and honey until smooth. Cook the beef bacon in a skillet over medium heat until crisp. Transfer to a paper towel-lined plate. Melt the butter in the same skillet and cook the eggs to your liking. Spread the honey mustard on the bottom half of each toasted bagel. Top with two slices of beef bacon, fresh tomato slices, a handful of arugula and an egg. Finish with the top half of the bagel and serve immediately.
