In the Kitchen with Mandy
Issue 21
I want to connect with y'all the way we once did before social media became so tricky, so grab a cup of coffee and let's catch up!

Alright, friends, go grab that cup of coffee and let's have a visit this morning! I know some will say it's too hot for coffee but, there's no such thing for me! I know this sounds bizarre, but I swear it cools me off sometimes.

Speaking of the heat, I have to get our AC replaced Tuesday and I'd rather cut off one of my toes than part with the $$ that's going to require. UUUGGHHHHHH…. it's always something, right?

I think this heat's got people acting crazier than usual. Remember when I shared that pic of the kids shucking corn?? I got an email about it then had the following back/forth:

Reader: Please tell your kid to put a shirt on.

Me: Are you serious??

Reader: Yes. Bare chest in kitchen not appropriate. For that matter, not anywhere else. It’s called etiquette.

Can you even believe that?? I'm not running a commercial kitchen here or hosting an afternoon tea. This is my family. In my home. It's like expecting someone to wear a hairnet when making supper or to never cook barefooted in their own kitchen.

Anyway, between this, some coocoo family stuff, the bathroom remodel that's whooped me for two weeks and the AC dying, I'm about ready to take a solo trip to Antarctica!

Calgon, take me away!

Here's some of the stuff I cooked last week and thought about cooking (with everything going on, I didn't not have a lot left in the tank come suppertime!)

hims don't care one bit about the crazies or the heat

Any time I have leftover cooked chicken breasts, I dice them into cubes and toss it in the freezer. When I have 3 cups or so, I make one of these easy casseroles for a super easy supper!

I told you it had wonky angles! Every single corner and angle had to be taped, mudded and sanded (and remember, I had to scrape the popcorn off the ceiling and pull the wallpaper down). All this and the paint color is too dark! UGH!!
I'm just looking over all this and realized these are ALL chicken recipes (well, and vegetables). I guess I had chicken on the brain last week!

If you're wondering if I responded to the etiquette police lady, I did. This is what I sent. It may seem harsh and some of you may think she was right. I hope not, though. I hope I can share real stuff from my real life, including candid photos of my family living life in our home like the regular people we are.

My response: Giving out etiquette lessons in such an impolite and sanctimonious way is so ironic that it's actually hilarious. My family and I will do whatever we're comfortable with in our own home. I've unsubscribed you from the email list so you won't need to concern yourself with my unrefined ways again.

And maybe I felt a little sideways about the whole thing because The Boy is my baby. He's the only boy and he's the youngest and he has never so much as given me a stank look in all of his 20 years. He is the kindest thing who ever lived and I would fist fight a polar bear for him.

Well, y'all wish me luck this week as I write that check for the AC and finish up that @#&% bathroom! Hopefully I'll have time to cook y'all something new this week!!

I appreciate you and am grateful I got to spend part of my morning with you!
