In the Kitchen with Mandy
Issue 25
I want to connect with y'all the way we once did before social media became so tricky, so grab a cup of coffee and let's catch up!

Good morning, friend!! You got that coffee?? Let's catch up a bit!

New York was amazing but Lord, it was hot! I mean, as a life-long SC gal, I know about heat and humidity but it hits different in a big city! I don't think there was a dry patch on me the whole time we were there! I took to toting around a wash cloth from the hotel just to mop my face and chest off before I walked inside somewhere!

The good thing was that it was none of our first times, so there wasn't any pressure to DO ALL THE THINGS. I'm not a very “touristy” traveler anyway, though. I can't tell you how many times I've been to NYC and I've never once been to the Statue of Liberty. I'm the sort who would rather get lost in Chelsea, find a hole-in-the-wall Korean restaurant, see an off-broadway show and wander around at 2AM looking for a Greek diner that serves 12 different kinds of pie.

All that being said, though, to escape the heat, we went to a really cool “immersive” museum in Times Square called RiseNY that I'd highly recommend! There's a virtual reality ride at the end where you fly over the city.

Here's what we ate this week!

Speaking of move-in day, I doubt I'll be sharing coffee with y'all for the next two Sundays... sigh… We take The Boy back to school this coming weekend and Baby Girl goes back the following weekend. And I might be ugly-crying into a pile of laundry for a few days after that. Just kidding… this will be the 11th and 12th time moving one of my kids into college so I've gotten somewhat used to it. Husband and I just move around the house like somebody died for a few days then we adjust.

I'm just glad Baby Girl changed her mind about going to Nicaragua next semester! NICARAGUA?!?! When she first threw that out there, all I could think about was the 1980's and was like, Are you CRAZY?! Ever heard of the Cold War?!?! In my mind, 1984 was only 20 years ago. HA!

I wish I had more NY pics but I have always been terrible about taking photos. It's mostly because I'd rather live in the moment than be behind a camera but I think 15 years of taking photos for the blog plays into it too. I HATE taking food pics. I love to cook and write and all the other things but trying to get those “just right” photos is so stressful for me.

Will y'all do something for me? Winter is when I publish most of my new recipes (better natural light for those dang photos) so I spend Fall developing and testing stuff. Tell me what are y'all hungry for! If you have something you'd like me to create or your own recipe you'd like me to try, just let me know!

I'll holler in a few weeks! Until then, take care of yourself, my friend! There's only one of you on this whole earth!
