I love a variation on a meatball, and this is one of the easiest. I made these without panko and onion (just preference, do what you like!) and paired these with a lemony roast potato and broccoli. They're also great over rice!

This recipe uses half of our leftover chicken from Sunday's roast, plus any veggies you've got in the fridge or freezer just waiting to get put to good use! I'm using leftover carrots, broccoli from Monday, and lots of scallions!

Sausage Potato Soup with Homemade Stock
It's still August, but I can't help but start to slip in a few fall recipes in my weekly rotation. I'm using the bones from our roast chicken to make a hearty stock to use as the base, and then following the recipe as stated!

If you think you don't like tofu, give this recipe a try. The prep gives the tofu tons of edges that get nice and crispy in the air fryer, and if you cook it until it's golden and add it to the sauce, you won't even notice it's not chicken!
