In the Kitchen with Mandy
Issue 28
I want to connect with y'all the way we once did before social media became so tricky, so grab a cup of coffee and let's catch up!

Good morning, beautiful people! I'm sitting here in the dark on my front porch (with my coffee, of course) and can't get over how quiet everything is! In the evening it sounds like a jungle chorus of birds, insects and other critters but everything must still be asleep now! It's lovely but a wee bit creepy if I'm being honest!

Have you ever had one of “those” weeks? I swear I couldn't get anything right! I tried to make a crock pot scalloped potato recipe I found online that turned into a curdled, watery MESS! Just goes to show, you can't always trust online recipes! It didn't look like AI but it clearly was. I peeled FIVE POUNDS of potatoes, grated a pound of cheese, wasted a pint of cream and was spitting nails when I saw the abomination that was in my crock pot!

Then I was going to make y'all an amazing recipe I've been working on with roasted chicken and potatoes that bake in one pan (seriously it's so easy and SO GOOD). Well, the first thing that happened was I LOST a whole pack of chicken. I looked e-ver-y-where then got panicked and thought I'd left them in my car the day before (they weren't there, thank God!). I finally found them in the cooler bag I tote to the grocery store. They'd been in there overnight so I had to throw them out. I went out and bought MORE chicken, got everything prepped then realized I didn't buy more potatoes. Lord, help me.

And then I made my tuna noodle casserole for y'all and the photos were garbage. It got really cloudy outside so I didn't have enough light. Once it sat there awhile waiting for the sun to pop back out, it had dried out and just looked punky.

[long sigh]

But at least my babies came home this weekend! Well, two of them did but I'm hoping Big Girl comes over today so I can have them all here. It's been too long since they've all been here at once and I miss them sooooo much!

I'm making everybody's favorite for Sunday dinner - even though a lot of this doesn't go together! They'll pack up the leftovers to take back to school so I don't mind who eats what at the table - they'll take their “special dishes” with them.

Baby Girl's Favorites

You haven't met El Gato yet because he stays mostly at Mama's but she's been on a trip so he's been watching TV with Shanks and me in the evenings. They're actually siblings so they get along like peas and carrots!

The Boy's Favorites

I also made the kids' favorite sweets for the weekend. You've seen these recently but, hey maybe this is a sign to try them! Or make them again if you already have!

I had a FB follower come at me sideways yesterday and I haven't stopped thinking about it since. I scolded him pretty hard but, y'all, he said some nasty things about how I should appreciate time with my kids more. ME!! I am a flawed, imperfect person and I have failed in many ways in my 50 years on this earth. I am guilty of many things, but not valuing my children ain't one of them. They are my greatest joy and I have never worked harder at anything in my whole life as I have at being a good mama and helping them to become good people.

I'm going to be mad a little longer but I'll get over it soon. I'm good at letting stuff go but sometimes I got to marinate in it a minute first.

I hope you have a peaceful week! And if you're marinating in something yourself, soak in it a minute, but let it go. Life is too hard to carry around other people's hate and ignorance too long.

Peace and bacon grease, y'all!
