October is bringing a new season of flavor to Capital Prime. As the weather cools, our menu is leaning into the warmth of fall with rich sauces, wild mushrooms, roasted vegetables, prime steaks, fresh seafood, and seasonal dishes made for lingering around the table.
 
This month, Executive Chef Ryan Lucas is sharing his take on fall at Capital Prime and a few of the dishes he’s especially excited about this season.
 
We’re also getting into the Halloween spirit with a mysterious tale from inside the restaurant, introducing you to another member of our Capital Prime family, and looking ahead to the holiday season.

A Chef’s Take on Fall at Capital Prime

There’s a moment every year when the lighter flavors of summer give way to something deeper. Roasted vegetables, wild mushrooms, rich sauces, and hearty greens take center stage, bringing warmth and richness to the season. That’s what Chef Ryan Lucas loves about the new menu at Capital Prime. It’s still rooted in what we do best, prime steaks and fresh seafood, with a little more indulgence in every course.
 
Start with Scallop Rockefeller, finished with a savory Parmesan-Dijon crust, or share the Chilled Seafood Platter with shrimp, oysters, scallop ceviche, lobster tail, and chilled mussels.
For the main course, the 24-ounce Chateaubriand is designed for two and finished tableside with red wine demi-glace, while the Double Bone Pork Chop pairs pommes purée, sautéed kale, and wild mushroom demi-glace.
 
Save room for something sweet with our Caramel-Topped Carrot Cake or decadent Golden Chocolate Torte. Fall is about gathering around the table, sharing good food, and enjoying the people you’re with.

It was a chilly October evening at Capital Prime. The dining room was full, the bar was busy, and dinner service was humming along. And yet... something wasn’t quite right. It started with a mysterious kitchen ticket. No table number. No server name. Just one word:
 
CAMPFIRE.
 
No one had rung it in. Then things got stranger. A figure appeared in the mirror behind the bar, only to disappear when the bartender turned around. A glass moved on its own. Bottles of wine appeared that no one remembered opening. And then, sitting on the host stand, the team discovered a cocktail napkin with four words written across it:
 
YOU FORGOT THE SPIRITS.
 
The lights flickered. A glass clinked. Somewhere nearby, a voice whispered...
“Another round...” But the night was far from over.

Tyshawn has been part of the Capital Prime team on and off for the last six years. He started in our kitchen doing dish maintenance before working his way up to prep and pantry. Through every role, he’s brought a wonderful attitude and a willingness to help wherever he’s needed.
 
His philosophy is simple: “If you are going to wash dishes, do the best you can.”
 
It’s something Tyshawn applies to every task he takes on, whether he’s preparing fresh ingredients for our signature salads or meticulously preparing one of our newest signature desserts. No matter the task, he makes sure everything is done with care.
