This week I'm going to talk about sourdough discard! Because it's a topic that I get asked about a lot.
“When can I start using my discard … and how long will it last in the fridge if I want to save it?”.
Sourdough discard is the portion of sourdough starter you remove before feeding your starer. Discarding is absolutely essential if you want to establish a thriving sourdough starter. However, it's not as wasteful as you might think - imagine how big your starter would get if you didn't discard!
You can use the discard, but you need to wait until your sourdough starter is at least 7 days old. Depending on how it's fermenting, you might need to wait just a little longer.
You can store the discard in the fridge - you can even add the discard from different days in the same jar with no issue.
