Let's talk about developing gluten in your dough - it really is super important and one of the best ways to ensure you get a lovely crust and crumb.
“What's the difference between stretch and folds and coil folds … and which one should I be using when making sourdough?”.
Both of these are techniques we use to develop the gluten in our dough.
At the crux of it, stretch and folds are probably the easiest technique (and the one I use in my
simple sourdough recipe).
Coil folds are just a different technique to develop the gluten. They can be used alone or alongside
lamination.
