Dear First name / friend

I hope you've had a great week!

Let's talk about developing gluten in your dough - it really is super important and one of the best ways to ensure you get a lovely crust and crumb.
What's the difference between stretch and folds and coil folds … and which one should I be using when making sourdough?”.

Both of these are techniques we use to develop the gluten in our dough.

At the crux of it, stretch and folds are probably the easiest technique (and the one I use in my simple sourdough recipe).

Coil folds are just a different technique to develop the gluten. They can be used alone or alongside lamination

I've written a full guide to performing coil folds and stretch and folds (there's videos too!). You'll also find out when to use them and why - as well as how to use them altogether!

Seeing as it's November I wanted to share some pumpkin inspired recipes with you! This easy sourdough pumpkin loaf is truly delicious and would make a lovely addition to your Thanksgiving table. And if you really are a lover of all things pumpkin, why not try these sourdough pumpkin crackers or these sourdough pumpkin muffins!

Oh and if you missed last week's question - you can read the question and answer here. Last week we talked about boosting your sourdough starter.

As always, I love to see your sourdough wins - and help you with any problems you might be having. Have a question you'd like answered on my site? Let me know!

Until next week,
Wishing you sourdough success,
Kate
