APPLE BLOSSOM CORDIAL
If you aren't familiar with a cordial, a cordial is an alcoholic herbal drink that have a variety of uses. They are meant to be sipped in small quantities, but can also be added to cocktails and other kitchen witchery. Cordials tend to have a sweet component, whether it be honey, maple syrup, glycerin, sugar, fruit or in this case,
previously made apple blossom syrup.
Fill a jar with fresh apple blossoms (or other medicinal/edible flowers). Cover the plant material half way with some kind of alcohol. I use brandy here, since I am a fan of brandy, but you can use whatever you'd like. For The Great Apple Blossom Chop of 2023 I used an apple brandy, imagine that! ;)
Fill the other half of the jar with apple-infused honey or syrup. If you don't have a flower-infused honey or syrup, plain honey will do just fine.
Let this infusion sit for at least two weeks. I usually strain after a month. Note that after you strain the cordial, the flavors will deepen, harmonize and get richer with age. Add to sparkling water, other drinks, hot water before bed, however you feel inspired. I always love to incorporate cordials into my baking… such a treat!
Store in a cool, dry cupboard. Enjoy!
